- 3 cups chicken broth

Instructions
- Heat the olive oil in a Dutch oven over medium heat until shimmering.
- Add the cubed chicken breast and diced onion; sauté until the chicken is no longer pink and the onion is translucent.
- Stir in the minced garlic and cook for an additional 30 seconds.
- Add all remaining ingredients except for the heavy cream; stir well to combine.
- Cover and let simmer for about 20 minutes to meld flavors.
- Remove from heat and stir in the heavy cream for added richness.
- Serve hot with optional toppings like avocado slices, sour cream, or tortilla chips.
