- ½ cup salted butter
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¾ teaspoon salt
- 1 cup all-purpose flour
- 1½ cups rice krispie cereal
- ⅔ cup mini vegan marshmallows
- Flaked salt for topping
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a medium saucepan, melt the butter over medium heat until it turns golden brown. Let it cool.
- In a mixing bowl, combine cooled brown butter, sugars, egg, and vanilla until smooth.
- Gradually add baking soda, salt, and flour; mix gently until combined.
- Fold in rice krispies and mini marshmallows until evenly distributed.
- Scoop dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-13 minutes or until edges are lightly golden. Sprinkle flaked salt on top while warm.
