  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • sea salt, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer bowl, beat the cold butter with light brown and granulated sugars until creamy. Add the cold egg and vanilla extract; mix until combined.
  4. Gradually add the dry ingredients to the wet mixture. Fold in chopped chocolate, remaining chocolate chips, and walnuts.
  5. Using a large cookie scoop (about 1/2 cup), portion out the dough into balls on prepared sheets. Press extra chocolate chips onto each ball.
  6. Bake for 12 to 13 minutes until edges are golden brown. Let cool for about 5 minutes on sheets before transferring to wire racks.
