  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • Sea salt, optional

Instructions

  1. Preheat oven to 400°F (200°C) and line cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
  3. In a stand mixer, cream cold butter with brown and granulated sugars until smooth.
  4. Add the cold egg and vanilla extract; mix until combined.
  5. Gradually incorporate the dry ingredients followed by chopped chocolate and walnuts until just mixed.
