- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter, cut into cubes
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg, cold
- 2 teaspoons pure vanilla extract
- 4 ounces semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips, divided
- 3/4 cup coarsely chopped walnuts
- Sea salt, optional
Instructions
- Preheat oven to 400°F (200°C) and line cookie sheets with parchment paper.
- In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt; set aside.
- In a stand mixer, cream cold butter with brown and granulated sugars until smooth.
- Add the cold egg and vanilla extract; mix until combined.
- Gradually incorporate the dry ingredients followed by chopped chocolate and walnuts until just mixed.
- Use a cookie scoop to form dough balls on the prepared sheets; sprinkle remaining chocolate chips on top.
- Bake for 12–13 minutes until edges are golden brown; cool on wire racks.
