  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cubed
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips
  • 3/4 cup coarsely chopped walnuts
  • Sea salt, optional

Instructions

  1. Preheat oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream cold butter with light brown sugar and granulated sugar until smooth. Add the cold egg and vanilla extract; mix until combined.
  4. Gradually incorporate the dry ingredients into the wet mixture. Then fold in chopped chocolate and chocolate chips.
  5. Scoop dough into 10 equal balls using a large cookie scoop; press extra chocolate chips on top.
  6. Bake for 12-13 minutes or until edges are golden brown. Let cool on the sheets before transferring to a wire rack.
