Ingredients
- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter, cubed
- 1 cup light brown sugar
- 1/4 cup granulated sugar
- 1 large egg, cold
- 2 teaspoons pure vanilla extract
- 4 ounces semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips
- 3/4 cup coarsely chopped walnuts
- Sea salt, optional
Instructions
- Preheat oven to 400°F (200°C) and line two cookie sheets with parchment paper.
- In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
- In a stand mixer, cream cold butter with light brown sugar and granulated sugar until smooth. Add the cold egg and vanilla extract; mix until combined.
- Gradually incorporate the dry ingredients into the wet mixture. Then fold in chopped chocolate and chocolate chips.
- Scoop dough into 10 equal balls using a large cookie scoop; press extra chocolate chips on top.
- Bake for 12-13 minutes or until edges are golden brown. Let cool on the sheets before transferring to a wire rack.
