  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer or using a hand mixer, cream together the cold butter with both sugars until smooth. Add the cold egg and vanilla extract; mix until combined.
  4. Gradually add the dry ingredients to the wet mixture along with chopped semi-sweet chocolate and one cup of chocolate chips. Mix on low speed until just combined.
  5. Using a large cookie scoop, portion out dough into ten equal balls without smoothing too much. Lightly press remaining chocolate chips into the tops.
  6. Bake for about 12 to 13 minutes until edges are golden brown. Let cool on the sheets for five minutes before transferring to a wire rack.
