Ingredients
- 2 cups all-purpose flour
- 1/2 cup cake flour
- 1 tablespoon cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup cold butter, cut into cubes
- 1 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 4 ounces semi-sweet baking chocolate, chopped
- 1 1/8 cups semi-sweet chocolate chips, divided
- 3/4 cup coarsely chopped walnuts (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
- In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
- In a stand mixer or using a hand mixer, cream together the cold butter with both sugars until smooth. Add the cold egg and vanilla extract; mix until combined.
- Gradually add the dry ingredients to the wet mixture along with chopped semi-sweet chocolate and one cup of chocolate chips. Mix on low speed until just combined.
- Using a large cookie scoop, portion out dough into ten equal balls without smoothing too much. Lightly press remaining chocolate chips into the tops.
- Bake for about 12 to 13 minutes until edges are golden brown. Let cool on the sheets for five minutes before transferring to a wire rack.
