Ingredients

  • 125 ml fresh orange juice
  • 250 grams olive oil (or half olive oil half sunflower oil for lighter flavor)
  • 50 grams honey
  • 80 ml water
  • 100 grams sugar
  • 1 + ½ teaspoon ground cinnamon
  • ½ teaspoon ground clove
  • ⅓ teaspoon ground nutmeg
  • ¼ teaspoon vanillin powder or ½ teaspoon vanilla extract
  • 1 orange zested
  • ½ teaspoon baking soda
  • 125 grams fine semolina
  • 550 grams all-purpose flour
  • 1 teaspoon baking powder
  • 400 grams sugar (for syrup)
  • 100 grams honey (for syrup)
  • 325 ml water (for syrup)
  • 1 stick of cinnamon (for syrup)
  • 45 dried cloves (for syrup)
  • 1 orange peel (for syrup)
  • honey (for garnishing)
  • ground walnuts (for garnishing)

Instructions

  1. In a saucepan, combine sugar, honey, water, cinnamon stick, cloves, and orange peel. Bring to a boil over medium heat. Reduce heat to low and let it simmer for about 10 minutes until slightly thickened. Remove from heat and set aside to cool.
  2. In a large mixing bowl, whisk together olive oil, orange juice, honey, water, sugar, cinnamon, clove, nutmeg, vanillin powder/vanilla extract, orange zest, and baking soda until well combined. Gradually add fine semolina and all-purpose flour while stirring until a soft dough forms. Add baking powder last and mix until just incorporated.
  3. Preheat your oven to 180°C (350°F). Take small amounts of dough and shape them into oval forms or traditional shapes as desired. Place shaped cookies on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for about 20 minutes or until golden brown. Remove from oven and let cool slightly before soaking in syrup.
  5. Dip each warm cookie into the cooled syrup for about 10 seconds on each side. Place on wire racks to cool completely.
  6. Once cooled completely, drizzle with honey and sprinkle with ground walnuts before serving.
