  • 2 ½ cups flour
  • 1 tsp salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • ¼ cup butter
  • ½ cup brown sugar
  • ¼ cup heavy cream
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 2 cups milk
  • 3 egg yolks
  • ⅓ cup sugar
  • 1 tbsp cornstarch
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter

Instructions

  1. Prepare the apples by peeling, coring, and slicing them. Toss slices with lemon juice, sugar, and spices in a bowl.
  2. Make the pie crust by mixing flour and salt, then incorporating cold butter until crumbly. Add ice water to form dough, chill for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Roll out half of the dough and place it in a pie dish. Fill with apple mixture.
  5. Prepare the toffee sauce by melting butter and mixing in brown sugar and cream until smooth.
  6. Pour some toffee sauce over the apples, cover with another layer of rolled dough, seal edges, and cut slits for steam.
  7. Bake for 20-25 minutes until golden.
  8. Make a custard layer by heating milk and whisking egg yolks with sugar and cornstarch; combine until thickened.
  9. Serve warm or at room temperature with custard.
