  • 3 lbs goat meat
  • ½ cup green seasoning
  • 45 tbsp curry powder
  • 6 pimento seeds
  • 2 medium potatoes (cubed)
  • 1 scotch bonnet pepper
  • ¼ cup onion
  • ¼ cup sweet pepper
  • 3 stems thyme
  • 2 tbsp ginger
  • Water (as needed)
  • 2 tbsp adobo
  • 3 tbsp complete seasoning
  • 3 tbsp black pepper
  • 1 tbsp jerk seasoning
  • 2 tbsp onion powder
  • 1 tsp cayenne pepper
  • 1 tsp oregano
  • 3 pegs garlic (plus one more for cooking)

Instructions

  1. Clean the goat meat with a mix of vinegar, lime, and water; rinse thoroughly.
  2. In a mixing bowl, combine curry powder, green seasoning, adobo, complete seasoning, black pepper, minced garlic, onion powder, cayenne pepper, and jerk seasoning. Rub onto the goat meat and marinate overnight in the fridge.
  3. Remove from the fridge and let sit at room temperature for about 10-15 minutes.
  4. In a large pot, heat crushed garlic with a bit of water until bubbling; add curry powder and pimento seeds.
  5. Brown the marinated goat meat in the pot.
  6. Add water, onions, sweet peppers, thyme stems, ginger, and scotch bonnet to the pot; cover and simmer for 2-3 hours, checking liquid levels regularly.
  7. When meat is tender, add cubed potatoes and adjust seasoning if necessary; cook until potatoes are soft.
  8. Serve hot over rice or with your choice of sides.
