- 25 corn tortillas
- 2 ½ cups shredded beef
- ½ cup mashed potatoes
- 1 medium tomato (diced)
- 1 small onion (chopped)
- 1 jalapeno pepper (chopped)
- Ground cumin
- Salt
- Pepper
- Vegetable oil for frying
Instructions
- In a mixing bowl, combine shredded beef, mashed potatoes, diced tomato, chopped onion, jalapeno pepper, ground cumin, salt, and pepper; mix well.
- Heat vegetable oil in a skillet over medium heat until shimmering.
- Take a corn tortilla and place about 2 tablespoons of filling in the center; fold it in half to form a taco.
- Fry the tacos in hot oil until golden brown on both sides, about 3-4 minutes per side.
- Remove from oil and drain on paper towels.
