- 1 cup cooked ground beef or turkey (seasoned)
- 1 cup roasted sweet potato or butternut squash
- 1 cup cottage cheese
- 1 cup cooked couscous or quinoa
- sliced avocado
- fresh parsley or cilantro (for garnish)
Instructions
- In a skillet, sauté the seasoned ground beef or turkey over medium heat until fully cooked.
- Preheat the oven to 400°F (200°C) and toss cubed sweet potatoes or squash in olive oil, salt, and pepper. Roast for 20-25 minutes until caramelized.
- In your serving bowl, layer cooked couscous or quinoa.
- Add the roasted sweet potatoes/squash and seasoned meat on top.
- Finish with a scoop of cottage cheese and sliced avocado. Garnish with herbs and add hot sauce if desired.
