Ingredients
- 1 medium sweet potato
- 150g (5 oz) lean ground beef
- 1 avocado
- 1 cup cottage cheese
- 1 tsp olive oil
- Honey for drizzling
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 200C (400F). Cube the sweet potato and toss it with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
- In a skillet over medium heat, cook the lean ground beef until browned. Season with smoked paprika, garlic powder, salt, and pepper.
- Assemble the bowl by placing roasted sweet potatoes at the base, topped with ground beef. Add sliced avocado and a generous scoop of cottage cheese.
- Drizzle honey over the dish and finish with an optional sprinkle of black pepper.
