  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked or canned corn, drained
  • 1 cup fresh parsley or arugula
  • 1 tsp sesame seeds
  • 1 tsp olive oil
  • Salt & pepper to taste

Instructions

  1. In a nonstick pan over medium heat, add olive oil and crack in the egg. Cook until the white is set and the yolk remains runny.
  2. In a mixing bowl, arrange halved avocado, sliced avocado, cherry tomatoes, corn, and fresh parsley or arugula.
  3. Place the fried egg in the center of the bowl. Drizzle with olive oil and sprinkle sesame seeds over the avocado.
  4. Season with salt and pepper before serving immediately.
