- 1 egg
- 1 ripe avocado
- 1 cup cherry tomatoes, halved
- 1 cup cooked or canned corn, drained
- 1 cup fresh parsley or arugula
- 1 tsp sesame seeds
- 1 tsp olive oil
- Salt & pepper to taste
Instructions
- In a nonstick pan over medium heat, add olive oil and crack in the egg. Cook until the white is set and the yolk remains runny.
- In a mixing bowl, arrange halved avocado, sliced avocado, cherry tomatoes, corn, and fresh parsley or arugula.
- Place the fried egg in the center of the bowl. Drizzle with olive oil and sprinkle sesame seeds over the avocado.
- Season with salt and pepper before serving immediately.
