- 1 large egg, room temperature
- 1 egg yolk, room temperature
- ⅓ cup spécial occasion sprinkles (jimmies)
- 32 oz cream cheese, room temperature
- ⅔ cup Regenerative Organic Certified® Cane Sugar
- ¾ cup Greek yogurt, room temperature
- 5 tbsp milk
- ½ cup heavy cream, room temperature
- 1 tsp pure vanilla extract
- 4 large eggs, room temperature
- ⅔ of the prepared cookie dough balls
- 1 cup white chocolate chips
- ⅓ cup heavy cream
Instructions
- Preheat the oven to 325°F (163°C) and prepare a springform pan.
- Make the sugar cookie crust by mixing flour, baking soda, salt, butter, cane sugar, vanilla extract, and eggs until combined. Press into the pan and bake until golden.
- Prepare cookie dough balls by creaming butter and sugar, adding milk and flour, then chilling.
- For the cheesecake filling, beat cream cheese with sugar, Greek yogurt, heavy cream, vanilla extract, and eggs; fold in cookie dough balls.
- Pour into the baked crust and bake using a water bath method until set.
- Chill for several hours before pouring over ganache made from heated cream and white chocolate.
