  • 1 egg yolk, room temperature
  • ⅓ cup spécial occasion sprinkles (jimmies)
  • 32 oz cream cheese, room temperature
  • ⅔ cup Regenerative Organic Certified® Cane Sugar
  • ¾ cup Greek yogurt, room temperature
  • 5 tbsp milk
  • ½ cup heavy cream, room temperature
  • 1 tsp pure vanilla extract
  • 4 large eggs, room temperature
  • of the prepared cookie dough balls
  • 1 cup white chocolate chips
  • ⅓ cup heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C) and prepare a springform pan.
  2. Make the sugar cookie crust by mixing flour, baking soda, salt, butter, cane sugar, vanilla extract, and eggs until combined. Press into the pan and bake until golden.
  3. Prepare cookie dough balls by creaming butter and sugar, adding milk and flour, then chilling.
  4. For the cheesecake filling, beat cream cheese with sugar, Greek yogurt, heavy cream, vanilla extract, and eggs; fold in cookie dough balls.
  5. Pour into the baked crust and bake using a water bath method until set.
  6. Chill for several hours before pouring over ganache made from heated cream and white chocolate.
