- 4 yellow plantains
- 1 lb ground beef
- ½ medium onion (finely diced)
- 2 garlic cloves (finely minced or grated)
- ½ green bell pepper (diced)
- ½ red bell pepper (diced)
- ¼ cup tomato sauce
- ¼ cup beef broth
- 2 tbsp avocado oil (separated)
- 1 tsp kosher salt (more for taste)
- ½ tsp ground black pepper
- 1 tbsp adobo seasoning
- ¼ – ½ tsp cayenne pepper
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the ends of each plantain and score the skin lengthwise before peeling.
- Coat each plantain with avocado oil and roast on the baking sheet for about 30 minutes, flipping halfway through.
- Meanwhile, sauté diced onion, minced garlic, and bell peppers in avocado oil until softened.
- Add ground beef to the skillet and brown thoroughly.
- Stir in adobo seasoning, tomato sauce, broth, cayenne pepper, salt, and black pepper; simmer until thickened.
- Remove roasted plantains from oven; cut a slit lengthwise and stuff with the beef mixture.
