  • 4 yellow plantains
  • 1 lb ground beef
  • ½ medium onion (finely diced)
  • 2 garlic cloves (finely minced or grated)
  • ½ green bell pepper (diced)
  • ½ red bell pepper (diced)
  • ¼ cup tomato sauce
  • ¼ cup beef broth
  • 2 tbsp avocado oil (separated)
  • 1 tsp kosher salt (more for taste)
  • ½ tsp ground black pepper
  • 1 tbsp adobo seasoning
  • ¼½ tsp cayenne pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the ends of each plantain and score the skin lengthwise before peeling.
  3. Coat each plantain with avocado oil and roast on the baking sheet for about 30 minutes, flipping halfway through.
  4. Meanwhile, sauté diced onion, minced garlic, and bell peppers in avocado oil until softened.
  5. Add ground beef to the skillet and brown thoroughly.
  6. Stir in adobo seasoning, tomato sauce, broth, cayenne pepper, salt, and black pepper; simmer until thickened.
  7. Remove roasted plantains from oven; cut a slit lengthwise and stuff with the beef mixture.
