- 1 cup very soft butter
- ½ cup powdered sugar

- Sugar for rolling
- ¾ cup diced fresh strawberries
- 1 tablespoon granulated sugar
- 2–2 ½ tablespoons fresh strawberry syrup
- 1 tablespoon fresh lemon juice
- 1 ⅓ cups powdered sugar
- 1 teaspoon vanilla
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add cornstarch, vanilla extract, salt, and flour; mix until just combined. Fold in diced strawberries gently.
- Scoop tablespoon-sized portions of dough, roll into balls, and coat lightly in sugar before placing on the baking sheet.
- Bake for 12-15 minutes until edges are golden but centers remain soft. Cool completely before icing.
