Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ tsp kosher salt
- 1 tsp ground cinnamon
- 8 tbsp butter
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 1 cup mashed bananas (approx. 2 bananas)
- ⅓ cup maple syrup
- 2 tsp vanilla extract
- 3 eggs
- ¾ cup buttermilk
- For the toffee sauce: 8 tbsp butter
- ¾ cup brown sugar (packed)
- ¾ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and spray a baking dish (9x9x3” or 9x11x3”) with nonstick spray.
- In a mixing bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet mixture until just combined.
- Pour batter into the prepared dish and bake for 45-55 minutes until a toothpick comes out clean.
- Meanwhile, prepare the toffee sauce by melting butter and brown sugar together over medium-low heat for about 10 minutes. Stir in heavy cream and cook for an additional 5 minutes.
- Once baked, poke holes in the cake and pour the cooled toffee sauce over it; let it soak for at least one hour before serving.
