  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (approx. 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • For the toffee sauce: 8 tbsp butter
  • ¾ cup brown sugar (packed)
  • ¾ cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish (9x9x3” or 9x11x3”) with nonstick spray.
  2. In a mixing bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually add to the wet mixture until just combined.
  4. Pour batter into the prepared dish and bake for 45-55 minutes until a toothpick comes out clean.
  5. Meanwhile, prepare the toffee sauce by melting butter and brown sugar together over medium-low heat for about 10 minutes. Stir in heavy cream and cook for an additional 5 minutes.
  6. Once baked, poke holes in the cake and pour the cooled toffee sauce over it; let it soak for at least one hour before serving.
