  • 1 medium onion (diced)
  • 28 ounce can of crushed tomatoes
  • 3 garlic cloves (minced)
  • 3 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • Salt and pepper (to taste)
  • 10 ounce package of frozen spinach (thawed)
  • 15 ounces ricotta cheese
  • 2 and ½ cups mozzarella cheese (shredded)
  • ⅔ cup parmesan cheese (shredded)
  • 1 large egg
  • 12 lasagna noodles

Instructions

  1. In a medium saucepan, heat olive oil over medium heat and sauté diced onions until translucent. Add crushed tomatoes, minced garlic, herbs, salt, and pepper; simmer for 20 minutes.
  2. Cook lasagna noodles according to package instructions. Drain and let cool.
  3. In a mixing bowl, combine thawed spinach, ricotta cheese, 1 ½ cups mozzarella cheese, parmesan cheese, and egg; mix well.
  4. Spread filling evenly on each noodle; roll tightly and place seam-side down in a greased baking dish.
  5. Pour remaining tomato sauce over rolls and sprinkle with additional mozzarella. Bake at 375°F for 25 minutes until bubbly.
