Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 16 oz baby spinach leaves
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 8 oz crumbled feta cheese
- 3 tablespoons olive oil
- ½ cup whole milk
- 1 large egg
- 2 tablespoons plain yogurt
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package of Phyllo Dough
- 2 egg yolks
- 2 tablespoons sesame seeds
- ½ teaspoon Nigella seeds (optional)
Instructions
- Heat olive oil in a pan over medium heat. Sauté onion until translucent, then add spinach along with salt and pepper. Cook until wilted; allow to cool.
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together olive oil, milk, egg, yogurt, salt, and pepper.
- Layer phyllo dough on a parchment-lined baking sheet, brushing layers with the milk mixture.
- Spread the cooled spinach filling over the top layer of phyllo. Cover with more layers of phyllo and brush again.
- Slice before baking and brush with egg yolk glaze; sprinkle sesame seeds on top.
- Bake for about 30-35 minutes until golden brown. Cool slightly before serving.
