  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 16 oz baby spinach leaves
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 oz crumbled feta cheese
  • 3 tablespoons olive oil
  • ½ cup whole milk
  • 1 large egg
  • 2 tablespoons plain yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package of Phyllo Dough
  • 2 egg yolks
  • 2 tablespoons sesame seeds
  • ½ teaspoon Nigella seeds (optional)

Instructions

  1. Heat olive oil in a pan over medium heat. Sauté onion until translucent, then add spinach along with salt and pepper. Cook until wilted; allow to cool.
  2. Preheat the oven to 350°F (175°C).
  3. In a bowl, whisk together olive oil, milk, egg, yogurt, salt, and pepper.
  4. Layer phyllo dough on a parchment-lined baking sheet, brushing layers with the milk mixture.
  5. Spread the cooled spinach filling over the top layer of phyllo. Cover with more layers of phyllo and brush again.
  6. Slice before baking and brush with egg yolk glaze; sprinkle sesame seeds on top.
  7. Bake for about 30-35 minutes until golden brown. Cool slightly before serving.
