Ingredients
- 360 g spekulatius cookies
- 150 ml cold decaffeinated coffee
- 500 g mascarpone cheese
- 250 g low-fat quark
- 60 g sugar
- 200 ml heavy cream
- 2 packets vanilla sugar
- 1 tablespoon cocoa powder (for topping)
Instructions
- In a mixing bowl, combine mascarpone cheese, quark, and sugar until smooth.
- Whip the heavy cream with vanilla sugar until soft peaks form, then gently fold it into the mascarpone mixture.
- Dip spekulatius cookies briefly in the cold coffee and layer them in a baking dish (25 x 20 cm).
- Spread three tablespoons of cream mixture over each layer of cookies. Repeat until ingredients are used up, finishing with a layer of cream.
- Dust cocoa powder on top and refrigerate overnight for optimal flavor.
