  • 360 g spekulatius cookies
  • 150 ml cold decaffeinated coffee
  • 500 g mascarpone cheese
  • 250 g low-fat quark
  • 60 g sugar
  • 200 ml heavy cream
  • 2 packets vanilla sugar
  • 1 tablespoon cocoa powder (for topping)

Instructions

  1. In a mixing bowl, combine mascarpone cheese, quark, and sugar until smooth.
  2. Whip the heavy cream with vanilla sugar until soft peaks form, then gently fold it into the mascarpone mixture.
  3. Dip spekulatius cookies briefly in the cold coffee and layer them in a baking dish (25 x 20 cm).
  4. Spread three tablespoons of cream mixture over each layer of cookies. Repeat until ingredients are used up, finishing with a layer of cream.
