Ingredients
- 2 slices sourdough or whole grain bread
- ripe avocado
- 2 eggs
- 2 slices smoked salmon
- Small handful of alfalfa or broccoli sprouts
- apple, sliced
- 12 strawberries, halved
- cup blueberries
- Salt & black pepper to taste
Instructions
- Toast the bread until golden brown and spread with mashed avocado; season lightly with salt.
- In a frying pan over medium heat, fry the eggs to your desired doneness.
- Place one egg on each slice of toast, then top with smoked salmon and sprouts.
- Arrange apple slices, halved strawberries, and blueberries alongside the toasts on a serving plate.
- Serve hot with your choice of tea.
