- 4 boneless, skinless chicken breasts (about 1.5 lbs)

- 1/3 cup soy sauce

- 1 tablespoon grated ginger
- 1 bell pepper (chopped)
- 2 cups broccoli florets
- 1 cup carrots (sliced)
- 1 cup snap peas
- Salt and pepper (to taste)
Instructions
- Place chicken breasts at the bottom of the slow cooker.
- In a mixing bowl, combine honey, soy sauce, minced garlic, and grated ginger until well mixed.
- Pour the sauce over the chicken, ensuring it’s thoroughly coated.
- Add chopped bell pepper, broccoli florets, sliced carrots, and snap peas; stir gently.
- Season with salt and pepper to taste.
- Cover and cook on low for 6 hours.
- Optional: For a thicker sauce, mix cornstarch with water about 30 minutes before serving and add to the slow cooker.
- Shred the chicken in the slow cooker and serve hot over rice or quinoa.
