Ingredients
- 1 lb ground beef
- 1 onion, diced
- 1 cup carrots, chopped
- 1 cup celery, sliced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 3 cups water
- 2 beef bouillon cubes
- 1 can kidney beans
- 1 can northern beans
- 1 tsp oregano
- 1 tsp basil
- 1 tsp thyme
- 1/2 cup apple juice
- 8 oz ditalini pasta
- salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain any excess fat.
- Chop the onion, carrots, celery, and garlic.
- In the slow cooker, combine ground beef with the chopped vegetables, diced tomatoes, water, bouillon cubes, beans, and herbs.
- Set the slow cooker to low heat and cook for 6 to 8 hours.
- About 15 minutes before serving, boil water in a pot and cook ditalini pasta until al dente.
- Stir cooked pasta into the slow cooker and warm for an additional 15 minutes before serving.
