- 1 tbsp olive oil
- 1 red bell pepper, finely chopped
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- 2 lbs ground beef
- ¾ cup Italian style breadcrumbs
- ½ cup grated parmesan cheese
- 2 eggs
- 2 tbsp tomato paste
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley, chopped
- 12–15 large fresh basil leaves
- 1 ¼ cup shredded mozzarella cheese
- marinara sauce for serving
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium skillet, heat olive oil over medium heat. Sauté chopped onion and red bell pepper for about 5 minutes until translucent, then add minced garlic and cook until fragrant.
- In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, black pepper, fresh parsley, and the cooled vegetable mixture. Mix until well blended.
- On a large sheet of parchment paper, shape the meat mixture into a rectangle (about 8"x15").
- Layer with fresh basil leaves and shredded mozzarella cheese on top.
- Roll the meatloaf tightly using the parchment paper as a guide and seal the ends.
- Place on a baking sheet lined with parchment paper and bake for approximately 1 hour.
- Let rest for 10 minutes before slicing and serving with warm marinara sauce over cooked pasta or zucchini noodles.
