  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese
  • marinara sauce for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, heat olive oil over medium heat. Sauté chopped onion and red bell pepper for about 5 minutes until translucent, then add minced garlic and cook until fragrant.
  3. In a large mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, tomato paste, salt, black pepper, fresh parsley, and the cooled vegetable mixture. Mix until well blended.
  4. On a large sheet of parchment paper, shape the meat mixture into a rectangle (about 8"x15").
  5. Layer with fresh basil leaves and shredded mozzarella cheese on top.
  6. Roll the meatloaf tightly using the parchment paper as a guide and seal the ends.
  7. Place on a baking sheet lined with parchment paper and bake for approximately 1 hour.
  8. Let rest for 10 minutes before slicing and serving with warm marinara sauce over cooked pasta or zucchini noodles.
