- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 3/4 cup cocoa powder, unsweetened
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups semi-sweet chocolate chips
- 1 cup chopped walnuts (or pecans/almonds)
- 1 cup mini vegan marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time and stir in vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Fold in chocolate chips and chopped nuts.
- Using a cookie scoop, form dough balls and place them on a parchment-lined baking sheet.
- Press mini vegan marshmallows into each cookie before baking for 10-12 minutes until edges are set but centers remain soft.
- Let cool slightly before drizzling with melted chocolate.
