- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 cup Feta Cheese
- 2 tablespoons Honey
- Freshly chopped Parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes. Slice them into even rounds about 1/2 inch thick.
- In a mixing bowl, toss the sweet potato slices with olive oil, salt, pepper, and smoked paprika (if using).
- Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer.
- Roast for about 30 minutes or until tender and golden brown, flipping halfway through.
- Once roasted, sprinkle crumbled feta over each round while warm and drizzle with honey. Garnish with freshly chopped parsley.
