Ingredients
- 1 large burrata ball (or 2 small)
- 4–5 ripe plums, halved and pitted
- 1 cup unsalted pistachios, chopped
- Olive oil
- Salt
- Balsamic vinegar (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, place halved plums cut-side up. Drizzle with olive oil and sprinkle with salt; toss gently.
- Spread coated plums on a baking sheet in a single layer and roast for 20-25 minutes until tender and caramelized.
- Let the plums cool slightly before assembling the salad: arrange burrata in the center of a serving platter, surround it with roasted plums, and sprinkle chopped pistachios on top.
- Drizzle with balsamic vinegar or additional olive oil if desired, then serve immediately.
