Ingredients
- 2 eggs
- Olive oil or butter
- Sliced avocado
- 1 medium carrot, peeled
- 45 cherry tomatoes
- 68 cucumber slices
- 2 tbsp red cabbage sauerkraut
- 2 tbsp white sauerkraut
- Salt and pepper, to taste
Instructions
- Heat olive oil or butter in a nonstick pan over medium heat. Crack in the eggs gently and cook sunny-side up until the whites are set but yolks remain runny. Season with salt and pepper.
- While the eggs cook, slice the cucumber, peel the carrot, and wash the cherry tomatoes.
- Arrange the sliced vegetables neatly on a serving plate along with both types of sauerkraut.
- Place the sunny-side-up eggs on top of or beside the veggies, adding a drizzle of olive oil or sprinkle of cracked black pepper if desired.
