Ingredients
- 1 cup strong brewed coffee (cooled)
- 24 ladyfingers
- 1 cup mascarpone cheese
- ½ cup coconut cream (unsweetened)
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup toasted coconut flakes (for garnish)
- 2 tbsp cocoa powder (for dusting)
Instructions
- Brew strong coffee and allow it to cool slightly. Dissolve sugar in the warm coffee.
- In a mixing bowl, combine mascarpone cheese, coconut cream, sugar, and vanilla extract; mix until smooth.
- Quickly dip each ladyfinger into the cooled coffee mixture without soaking.
- Layer soaked ladyfingers in a serving dish followed by the mascarpone filling. Repeat until all ingredients are used, aiming for at least three layers.
- Dust cocoa powder on top and sprinkle with toasted coconut flakes. Refrigerate overnight for optimal flavor.
