  • 1 tsp kosher salt
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • 6 slices turkey bacon (diced)
  • 1 large onion (diced)
  • 2 lb yellow flesh potatoes (sliced)
  • 1 cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • 1 beaten egg

Instructions

  1. For the crust, mix flour and salt in a bowl. Blend in diced butter until crumbly. Gradually add ice water until the dough forms. Chill for at least 30 minutes.
  2. In a skillet, cook diced turkey bacon until crispy. Remove and sauté onions until translucent.
  3. In a pot, combine sliced potatoes, heavy cream, cooked turkey bacon, sautéed onions, cheese, and seasonings.
  4. Preheat oven to 375°F (190°C). Roll out chilled dough and line your pie dish. Fill with potato mixture and cover with more dough if desired.
  5. Cut slits in the top crust for steam to escape, brush with beaten egg, and bake for about 60 minutes until golden brown.
