- 2 ½ cups all-purpose flour
- 1 tsp kosher salt
- 1 cup cold butter (diced)
- ½ cup ice water
- 6 slices turkey bacon (diced)
- 1 large onion (diced)
- 2 lb yellow flesh potatoes (sliced)
- 1 cup heavy cream
- 1 ½ cups shredded cheddar cheese
- 1 beaten egg
Instructions
- For the crust, mix flour and salt in a bowl. Blend in diced butter until crumbly. Gradually add ice water until the dough forms. Chill for at least 30 minutes.
- In a skillet, cook diced turkey bacon until crispy. Remove and sauté onions until translucent.
- In a pot, combine sliced potatoes, heavy cream, cooked turkey bacon, sautéed onions, cheese, and seasonings.
- Preheat oven to 375°F (190°C). Roll out chilled dough and line your pie dish. Fill with potato mixture and cover with more dough if desired.
- Cut slits in the top crust for steam to escape, brush with beaten egg, and bake for about 60 minutes until golden brown.
