- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping (Cool Whip), thawed
- 1 cup packed brown sugar
- ½ cup light corn syrup
- ¼ cup unsalted butter
- 2 large eggs, lightly beaten
- 1 ½ cups chopped pecans
- Pinch of salt
Instructions
- Make the crust by mixing graham cracker crumbs, sugar, and melted butter in a bowl. Press into a 9×13-inch baking dish and chill for 10–15 minutes.
- For the cream cheese layer, beat softened cream cheese until smooth; gradually add powdered sugar and vanilla extract. Fold in whipped topping and spread over the chilled crust.
- In a saucepan over medium heat, combine brown sugar, corn syrup, and butter until bubbling. Remove from heat and whisk in beaten eggs gradually. Stir in pecans and salt; let cool slightly.
- Pour the cooled pecan mixture over the cream cheese layer evenly. Cover tightly with plastic wrap and refrigerate for at least 4 hours or overnight.
- To serve, slice with a warm knife and enjoy!
