- 4 overly ripe bananas
- 2 eggs (room temperature)
- 1/2 cup butter (room temperature)
- 1 cup granulated sugar
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups chopped pecans
Instructions
- Preheat your oven to 325°F (163°C) and prepare a loaf pan by greasing it with butter or lining it with parchment paper.
- In a medium bowl, whisk together flour, sugar, salt, baking powder, and baking soda.
- In another bowl, mash the bananas until smooth. Add softened butter and eggs; mix gently.
- Fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Gently fold in chopped pecans evenly through the batter.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
