Ingredients
- 16 Oreo cookies
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup chopped Oreo cookie crumbs (both large and small)
Instructions
- Preheat your oven to 350°F and line a muffin pan with paper liners. Place an Oreo cookie in each liner.
- In a mixing bowl, beat the softened cream cheese with sugar, eggs, and vanilla until smooth. Gently fold in the chopped Oreo crumbs.
- Spoon the cheesecake mixture over each Oreo in the liners, filling them about two-thirds full. Top with additional cookie crumbs.
- Bake for 14-16 minutes until slightly jiggly in the center. Allow them to cool before refrigerating for at least two hours.
