Ingredients
- 1 cup pitted dates, chopped
- 1 cup boiling water
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- Zest of 2 oranges
- 1/2 cup fresh orange juice
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground cardamom
- 1/4 tsp salt
- 1/4 cup honey
- 1 tbsp fresh orange juice
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch cake tin.
- In one bowl, whisk together flour, baking powder, baking soda, cardamom, and salt.
- In another bowl, cream together softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in orange zest and juice.
- Fold in chopped dates into the wet mixture.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Pour batter into the prepared cake tin and bake for 40–45 minutes until a toothpick comes out clean.
- For the drizzle, warm honey and orange juice together until melted.
- Once cooled slightly, drizzle honey mixture over the cake.
