  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch cake tin.
  2. In one bowl, whisk together flour, baking powder, baking soda, cardamom, and salt.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in orange zest and juice.
  4. Fold in chopped dates into the wet mixture.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Pour batter into the prepared cake tin and bake for 40–45 minutes until a toothpick comes out clean.
  7. For the drizzle, warm honey and orange juice together until melted.
  8. Once cooled slightly, drizzle honey mixture over the cake.
