- 17 ounces paneer pasta
- 4 cups chicken stock
- 1 medium onion, chopped
- 1 cup heavy whipping cream
- 4 to 5 ounces fresh spinach
- 1 cup sun-dried tomatoes
- 1/2 cup freshly shredded parmesan cheese
- 5 garlic cloves, minced
- 1 tablespoon sun-dried tomato oil
- 1/3 cup tomato paste
- 1 teaspoon red chili flakes
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1/4 cup fresh basil
Instructions
- Cook the pasta: Bring chicken stock to a simmer in a large pot. Add paneer pasta and cook until al dente.
- Sauté aromatics: In another pan or in the same pot on low heat, add sun-dried tomato oil with chopped onions and minced garlic; cook until softened.
- Combine ingredients: Stir sautéed mixture, heavy cream, tomato paste, sun-dried tomatoes, red chili flakes, salt, and pepper into the cooked pasta.
- Add greens and cheese: Mix in fresh spinach and parmesan cheese until the spinach wilts.
- Serve hot: Garnish with fresh basil before serving.
