- 200 g Green Olives (Castelvetrano or Manzanilla)
- 150 g Feta Cheese (block feta in brine)
- 100 g Cream Cheese (room temperature)
- 2 tbsp Extra Virgin Olive Oil
- 1 clove Garlic (minced)
- Zest and juice of ½ Lemon
- 1 Roasted Red Pepper (chopped)
- 1 tsp Dried Oregano
- Chili Flakes (optional)
Instructions
- Prepare all ingredients by ensuring the cream cheese is at room temperature.
- In a food processor, combine green olives, feta cheese, cream cheese, extra virgin olive oil, minced garlic, lemon zest, and lemon juice. Blend until smooth.
- Scrape down the sides of the bowl and add chopped roasted red pepper, dried oregano, chili flakes (if using), and black pepper. Pulse until combined but still slightly chunky.
- Taste and adjust seasoning if needed.
- Transfer to a serving bowl, garnish with green olives and a drizzle of olive oil before serving.
