Ingredients
- 3/4 cup softened butter
- 1 and 1/2 cups packed brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 and 3/4 cups old-fashioned rolled oats (1 cup whole, 3/4 cup blended)
- 2 and 1/2 cups semisweet chocolate chips
Instructions
- Preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper.
- In a large bowl or stand mixer, beat softened butter until creamy. Add brown sugar and beat until fluffy.
- Mix in the egg and vanilla extract until fully incorporated.
- In a separate bowl, combine flour, baking soda, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Stir in whole oats. Blend the remaining oats into a coarse flour consistency; then incorporate into the dough.
- Fold in chocolate chips gently.
- Shape dough into balls about two inches across and place on prepared sheets with space between.
- Bake for 9–10 minutes until edges are firm but centers may appear shiny.
- Let cool for several minutes before transferring to wire racks.
