- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1/2 onion, chopped
- 1 sheet puff pastry, thawed
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet over medium heat, heat 1 tablespoon of olive oil. Sauté the chopped onion until translucent, about 5 minutes.
- In a mixing bowl, combine the sautéed onions with chopped spinach and crumbled feta cheese; mix well.
- Roll out the thawed puff pastry on a floured surface to slightly thinner than its original thickness, then cut it into 4-inch squares.
- Place a spoonful of the spinach-feta mixture in the center of each square. Fold diagonally to form triangles and seal the edges with a fork.
- Brush the tops with remaining olive oil and bake for about 20 minutes or until golden brown.
