Ingredients
- 4 (6 oz each) salmon fillets
- 1 cup crumbled feta cheese
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup olives, pitted and sliced (optional)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine feta cheese, sun-dried tomatoes, olives (if using), olive oil, garlic, oregano, salt, and pepper.
- Place salmon fillets skin-side down in a baking dish. Season with salt and pepper.
- Spoon the topping mixture evenly over each fillet.
- Cover the dish with aluminum foil and bake for 15 minutes.
- Remove foil and continue baking for an additional 10 minutes until the salmon flakes easily.
- Garnish with fresh parsley before serving.
