Ingredients
- 2 cups cooked + shredded organic chicken breasts
- 1 Tbsp Extra virgin olive oil
- 2 Tbsps unsalted butter
- 4 garlic cloves, minced
- 4 cups organic chicken stock
- 3 Tbsps organic all-purpose flour
- 1 1/2 Tbsps Tuscan Marry Me blend
- 1 tsp sea salt
- 5–6 organic sundried tomatoes
- 1 Tbsp tomato paste, organic
- 1 1/2 cups organic heavy cream
- 3 Tbsps cooking apple vinegar (or chicken stock)
- 1/2 lemon, freshly-squeezed
- 1 cup chopped organic kale, frozen or fresh
- 1 cup freshly-grated parmesan
- 1–2 cups tomatoes, optional
- 1 Homemade Texas Toast Garlic Bread
Instructions
- In a large pot, heat the extra virgin olive oil and unsalted butter over medium heat. Add the minced garlic and sauté until fragrant.
- Sprinkle in the organic all-purpose flour and stir well to combine. Cook for about 1 minute until golden.
- Gradually pour in the organic chicken stock while stirring to prevent lumps. Bring to a simmer.
- Add in the shredded chicken, Tuscan Marry Me blend, sea salt, sun-dried tomatoes, tomato paste, heavy cream, apple vinegar (or chicken stock), and lemon juice. Stir well to mix everything together.
- Stir in the potato gnocchi. Cook according to package instructions until they float to the top.
- Once gnocchi is cooked through, add chopped kale and grated parmesan. Stir until kale wilts slightly. Adjust seasoning if needed.
- Ladle your luscious soup into bowls and serve with Homemade Texas Toast Garlic Bread on the side for dipping.
