Instructions
- In a mixing bowl, beat unsalted butter and maple sugar until combined. Add powdered sugar and continue beating until light and fluffy.
- Mix in pure maple syrup and maple extract until fully incorporated.
- In a separate bowl, whisk together all-purpose flour, cornstarch, and salt. Gradually add to the wet mixture until the dough forms.
- Chill the dough wrapped in plastic wrap for at least 30 minutes.
- Preheat your oven to 350°F (175°C). Roll out chilled dough to 1/8-inch thickness and cut into leaf shapes with a cookie cutter.
- Bake on parchment-lined sheets for 8-10 minutes until edges are lightly golden. Allow cookies to cool completely.
- For the cream filling, beat unsalted butter with powdered sugar, pure maple syrup, vanilla extract, maple extract, and salt until smooth. Assemble cookies by spreading filling between two cookies.
