- 3–4 medium bananas
- 2 tablespoons brown sugar
- 1 ½ teaspoons vanilla extract
- ½ teaspoon ground cinnamon
- ½ cup unsalted butter, softened
- 1 cup sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup unsalted butter
- ½ cup pure maple syrup
- ¼ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease one 9×5 inch pan or two 8×4 inch pans; line the base with parchment paper.
- In a small bowl, mash bananas until smooth. Mix in brown sugar, vanilla extract, and cinnamon; set aside.
- In a large bowl, cream softened butter and sugar until light. Add eggs one at a time, mixing well.
- Sift flour, baking soda, and salt into another bowl; combine with the wet mixture until just mixed.
- Fold in the banana mixture gently.
- Pour batter into prepared pans and bake for approximately: Two 8×4 pans: 35–40 minutes; One 9×5 pan: Bake for 30 minutes at 350°F then lower to 325°F for an additional 15–20 minutes.
- Cool in pans for about ten minutes before transferring to a wire rack.
