- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1.5 cups panko breadcrumbs
- 4 slices cooked turkey or beef
- 4–8 slices Swiss cheese
- ½ cup mayonnaise
- 3 tablespoons Dijon mustard
- 1 tablespoon honey
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C) if baking.
- Pound chicken breasts to about ½ inch thick.
- Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
- Dredge each chicken breast in flour, dip in eggs, then coat with breadcrumbs.
- Heat oil in a skillet over medium heat and cook chicken until golden brown (about 5-7 minutes per side). Alternatively, bake for about 20-25 minutes.
- Top each cooked breast with turkey or beef slices and Swiss cheese; briefly broil until cheese melts.
- Whisk together sauce ingredients and serve drizzled over the chicken.
