Ingredients
- 2 pounds baby yellow potatoes
- Kosher salt and freshly ground black pepper
- 2 tablespoons olive oil
- 3/4 cup shredded cheddar cheese
- 1/3 cup sour cream
- 4 slices diced turkey bacon
- 2 tablespoons chopped fresh chives
Instructions
- Preheat your oven to 450°F (230°C) and prepare a baking sheet with oil or nonstick spray.
- Boil the baby yellow potatoes in salted water until tender (about 15 minutes). Drain and let cool slightly.
- Smash each potato on the baking sheet using a flat measuring cup or glass; brush with olive oil and season with salt and pepper.
- Bake for 25-30 minutes until crispy; add cheese for the last few minutes until melted.
- In a skillet, cook diced turkey bacon until crispy; drain excess fat.
- Top each potato with sour cream, turkey bacon bits, and chopped chives before serving hot.
