  • 2 pounds baby yellow potatoes
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 3/4 cup shredded cheddar cheese
  • 1/3 cup sour cream
  • 4 slices diced turkey bacon
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat your oven to 450°F (230°C) and prepare a baking sheet with oil or nonstick spray.
  2. Boil the baby yellow potatoes in salted water until tender (about 15 minutes). Drain and let cool slightly.
