Ingredients
- 200 g granulated sugar
- 110 g butter
- 1 large egg
- 1 tbsp lemon zest
- 210 g all-purpose flour
- 1 tbsp poppy seeds
- 200 g cream cheese (cold)
- 120 g heavy cream
- 1 tsp vanilla extract
- 75 g powdered sugar
- 1 tbsp agave or honey
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, cream together the butter and sugar until light and fluffy. Add in the egg, lemon zest, and vanilla extract.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds. Gradually mix dry ingredients into the wet mixture until just combined.
- Drop cookie dough onto a parchment-lined baking sheet.
- Bake for about 10 minutes or until edges are lightly golden. Cool on wire racks.
- For the frosting: Beat cold cream cheese until smooth; add powdered sugar, agave or honey, and vanilla extract while mixing.
- Whip heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
- Frost cooled cookies with the cheesecake frosting.
