  • 200 g cream cheese (cold)
  • 120 g heavy cream
  • 1 tsp vanilla extract
  • 75 g powdered sugar
  • 1 tbsp agave or honey
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy. Add in the egg, lemon zest, and vanilla extract.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds. Gradually mix dry ingredients into the wet mixture until just combined.
  4. Drop cookie dough onto a parchment-lined baking sheet.
  5. Bake for about 10 minutes or until edges are lightly golden. Cool on wire racks.
  6. For the frosting: Beat cold cream cheese until smooth; add powdered sugar, agave or honey, and vanilla extract while mixing.
  7. Whip heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
