- 4 cod fillets (approximately 6 ounces each)
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika (optional)
- 1/3 cup plain Greek yogurt or sour cream
- 2 tablespoons mayonnaise (optional)
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon grated lemon zest
- 1 teaspoon Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the cod fillets on the prepared baking sheet. Drizzle with olive oil and season both sides with salt, black pepper, garlic powder, and paprika if desired.
- Bake in the preheated oven for 12 to 15 minutes until cooked through and flaky.
- While the cod bakes, mix Greek yogurt or sour cream, mayonnaise (if using), chopped dill, lemon juice, lemon zest, Dijon mustard, salt, and pepper in a bowl until smooth.
- Once baked, remove the cod from the oven and top each fillet with lemon-dill sauce. Serve immediately.
