  • 12 fresh oysters (cleaned and on half shell)
  • 6 tbsp unsalted butter
  • 2 garlic cloves (minced)
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped parsley
  • Sea salt to taste
  • Black pepper to taste
  • Lemon wedges
  • Extra chopped parsley

Instructions

  1. Preheat your grill to high heat (about 500°F / 260°C).
  2. In a small saucepan on low heat, melt the butter and add minced garlic, cooking until fragrant.
  3. Stir in lemon juice, lemon zest, parsley, salt, and pepper; remove from heat once combined.
  4. Place oysters on the grill flat side up; cover and cook for 2–3 minutes until edges curl.
  5. Spoon about 1 teaspoon of lemon butter sauce onto each oyster; close grill lid and cook for another 1–2 minutes.
  6. Carefully remove oysters using tongs; serve immediately with lemon wedges and extra parsley.
