- 1.5 lb oxtail
- 3 garlic cloves (minced)
- 1 tsp allspice
- 1 tbsp plant-based Worcestershire sauce
- 1 medium onion (sliced)
- ½ red bell pepper (diced)
- ½ green bell pepper (diced)
- 2 tomatoes (diced)
- 16 oz butter beans (rinsed)
- 2 tbsp tomato paste
- 3 cups water
Instructions
- Wash and rinse oxtail, then pat dry.
- Marinate oxtail with garlic, plant-based Worcestershire sauce, spices, and vegetables for at least 30 minutes.
- Set Instant Pot on sauté mode; sear oxtail on each side for about one minute.
- Remove oxtail; sauté onions and peppers until softened.
- Return oxtail to pot with remaining ingredients; pressure cook on high for 20 minutes.
- After cooking, add butter beans and simmer until thickened.
