Ingredients
- 2 1/4 cups mashed overripe bananas
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Mash the bananas until you have about 2 1/4 cups.
- In a mixing bowl, combine flour, salt, baking soda, and nutmeg.
- In another bowl, cream together butter, white sugar, and brown sugar. Add eggs, vanilla extract, cinnamon, and mashed bananas; mix well.
- Gently fold the banana mixture into the dry ingredients until just combined.
- Pour the batter into a greased baking pan.
- Place a trivet inside the Instant Pot and add one cup of water.
- Cover the pan with foil for easy removal later.
- Seal the Instant Pot lid and set to cook on manual for 50 minutes; perform a quick release afterward.
- Carefully remove the pan using foil handles and let cool before slicing.
