  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the bananas until you have about 2 1/4 cups.
  2. In a mixing bowl, combine flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together butter, white sugar, and brown sugar. Add eggs, vanilla extract, cinnamon, and mashed bananas; mix well.
  4. Gently fold the banana mixture into the dry ingredients until just combined.
  5. Pour the batter into a greased baking pan.
  6. Place a trivet inside the Instant Pot and add one cup of water.
  7. Cover the pan with foil for easy removal later.
  8. Seal the Instant Pot lid and set to cook on manual for 50 minutes; perform a quick release afterward.
  9. Carefully remove the pan using foil handles and let cool before slicing.
