- 12 Medjool dates, pitted

- 2 tbsp honey (plus extra for drizzling)

Instructions
- Slice each Medjool date lengthwise without cutting all the way through and remove the pits.
- In a bowl, mix ricotta cheese, honey, vanilla extract, and optional cinnamon until smooth.
- Fill each date with the ricotta mixture using a spoon or piping bag.
- Sprinkle chopped pistachios on top and drizzle with additional honey.
